Tomato Boats

Makes two:

• 1 large beefsteak tomato
• 1 cheese slice
• 1 stick of celery

Cut the tomato in half, if you prefer them hot bake in a moderate oven for 30 minutes

Cut the cheese slice in half diagonally to form the sail

Cut a very thin length of celery to use as the mast (you can use cocktail sticks but celery is safer and edible!)

Cut the rest of the celery into thin slices.

Push the celery mast through the cheese slice and into the tomato to make the sail.

Arrange the rest of the celery on the plate around the tomato to form the sea.

Serve with bread or toast.
