Coconut bars

  • 85 g (3 oz cream cheese
  • 56 g (2 oz) brown sugar
  • 115 g (4 oz) desiccated coconut
  • 56 g (2 oz) ground mixed nuts

 

Mix all ingredients well and shape into a bar and cut into pieces. Leave to 'set' on greaseproof paper in fridge for 20 minutes.

 

Makes around 20 bars and will keep in fridge for several days.
