Basic Sweet and Sour Sauce
Fry the onion and garlic in the oil for a few minutes until softened. Add the tomatoes, puree, stock or water, pepper, vinegar, sugar and pineapple and simmer gently for about 15 minutes.
That is the basic sauce - you can serve it as it is with rice, or add anything you like to it.
i.e.Any vegetables chopped and added with the tomatoes and then simmered until soft.
Pre-cooked diced pork for a more traditional sweet and sour.
Soya Mince for a vegetarian option.
