Hamantashen are traditionally eaten during the Jewish festival of Purim.

Originally cakes filled with poppy seeds meaning literally "Haman's Pockets".

This recipe is for a filling of your choice: try mincemeat or poppy seeds mixed with jam.

  • 3/4 cup sugar
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 oz Butter
  • 1 egg, beaten
  • 3 tablespoons orange juice
  • Filling of your choice.

 

Combine all the dry ingredients and stir to blend.

Cut the butter into very small pieces and mix until the combined mixture resembles rough breadcrumbs.

Add the beaten egg and orange juice and mix until the dough forms. Chill the dough.

Roll the dough to approx.. 1/8 inch thick. Cut circles with a 3 inch round cookie or pastry cutter.

Place a teaspoon of your favorite filling on the centre of each circle.

Fold the edge of the circle inward toward the centre in thirds to form a triangle shape.

Lightly pinch together 3 edges of the 3 joined sections of dough, leaving a small opening in the centre for the filling to peek through.

Bake for 20 minutes at 200 c
