    Default Nice duck crown recipe please urgenty

    I want to impress someone tomorrow with a nice meal............ any one got a really good duck crown recipe they can pass on .... please x

    sorry ive never cooked duck although i do enjoy eating it. have you tried a good old google search?

    i reckon with duck it will be down to the flavours you use with it so a nice stuffing would be good and basted in lots of orangey type stuff.

    i would google Jamie Oliver I reckon he'll have something xx

    I cook duck a lot!

    I wouldn't put any stuffing in it as that holds the fat in and you need that to drain.

    I would score the skin a few times and stab the fleshy bits ( great if you are feeling stabby)

    Heat up a frying pan and sear the crown breast down to crisp up the skin for 5 mins or so.

    Put bird on a trivet or the thing that's in your grill pan - to keep it off the bottom of the roasting tin ( you don't want it sitting in the fat that drains)

    Cook-you might have to google times. I usually take off 15 mins as my lot are animals and like it pink.

    Let it rest- don't cover it with foil when resting as it makes the crispy skin go soggy

    I make gravy with chicken stock, port or good red wine and some cranberry sauce. It needs to be sharp to cut through the duck.

    I serve with mash, carrots etc and a home made red cabbage dish which has red wine vinegar in, brown sugar and sultanas


    Don't forget you don't get a lot on a duck.... A crown might only be enough for two
