Ingredients

225g Chicken Breast (Quorn pieces)
225g Rice
100g Plain, low fat yoghurt
1 tablespoon Tikka Curry Powder
1 tablespoon lemon juice
1 teaspoon oil (sunflower, corn, vegetable etc...)
1 chopped onion
2 chopped peppers
1 finely chopped garlic clove

(other vegetables as per taste)


1. Cook rice as per packet instructions
2. Mix the yoghurt, tikka powder, & lemon juice in a bowl.
3. Heat the oil in a wok and cook the chicken, adding the chopped garlic after a few minutes. Continue to cook the chicken until nearly done.
4. Add the yoghurt mix and stir in with the chicken for a couple of minutes.
5. Add the onion, peppers and any other vegetables of your choice and continue to cook for 5 minutes or until vegetable are cooked to your liking (meal tastes better if veg is kept on the crunchy side, don't leave it too long as the chicken will get over done) stir continuously to ensure even cooking.
6. Gradually stir in the the rice keeping the heat on.

What cluster meeting? Because I'm on maternity they don't send me a lot of stuff & it's infuriating!

My leader is Rebecca (she is useless)...she does a WW meeting in Redhill on Tuesday lunchtimes...think she also does an evening one, but not sure which day...thought we might have the same leader.

There is a cluster meeting at Warwick school redhill in the evening may 11th. I put Twinkles form in with mine this time as she has a habit of not posting it but finding it weeks after in needs to be in, under the seat of the car
