After ours are out of the EYFS stage we have a scrap book where we put art work phots etc of what they get up while in our care.
    Paperwork side are
    Permission Form / emergency contacts
(all ours are on 1 form ie outings, suncream etc)
    Parental Responsibilty (sp)

As the child is on the Childcare Register you also need to note the differences between it and the Eyfs and make sure you have provided parents with the relevant paperwork - information about the CR, policies and procedures, info about alternative care if you cannot work etc.
