    Default Delia Smith Recipe

    Does anyone have the Chocolate & Sour cherry crumble recipe that delia did at xmas - it was on the internet at xmas, but can not find it anywhere now and do not want to buy recipe book as thats the only thing I want from it

    Can't get it anywhere on the internet now but if anyone has it I would be very grateful

    Ingredients
    125g sour cherries
    75ml brandy

    for the custard
    570ml double cream
    75g cocoa powder
    5 egg yolks
    50g caster sugar
    1 tsp cornflour

    for the crumble
    40g cold butter diced
    60g self raising flour
    3 tbsp cocoa powder
    50g demerara sugar
    75g whole almonds (skin on is ok)

    to finish
    cocoa powder
    1 tbsp edible red or gold iridescent sugar sparkles

    a 1 litre baking dish

    put cherries and brandy in a saucepan and bring to simmering point. then turn off and leave to soak for an hour

    whisk the cream and cocoa together in a saucepan then bring to a simmer over medium heat then reduce heat and simmer very gently for 10 minutes

    then whisk the egg yolks, sugar and cornflour together in a a bowl then whisk in the hot chocolate cream then immediately return to the heat to get to simmering point to thicken it.
    when it is ready pour in the cherries and brandy
    put in a baking dish and leave to cool

    place flour butter cocoa and sugar in a food processor give it a whizz until it resembles breadcrumbs
    then add the almonds and process until they are chopped...but not too much


    preheat the oven to 180
    sprinkle the crumble mix over the custard
    bake for 35 minutes

    no problem

    boiler is still not fixed but currently working..it is on off on off working
    and the gas repair people therefore seem to be unable to find what the problem is...

    Ps ...now that I wrote out the recipe I really want to make this crumble myself...never made a crumble with a custard base before!
