    of course - Golden coconut pyramids

    2 eggs
    225g desiccated coconut
    150g caster sugar
    glace cherries halved

    1) line 1 or 2 uncreased baking sheets with non stick baking paper.
    2) beat two eggs (i added half a whisked egg as well as the coconut bag weighs in at 250g and didn't see the point in not putting it all in)
    3) leave mixture to stand for 20 mins
    4) dip hands in cold water, shape mixture int 16 pyramids, use an egg cup as a guide (i didn't)
    5) add cherry on top
    6) cook on gas mark 4 (180) for25 - 30 mins until pale golden
    7) remove from sheets and cool on a wire cooling rack.
    8) eat lol
