I see no reason not to hold them as an employer. My previous employer (a rail operator) held both my CRB and First Aid at Work certificates on my employee's file. Obviously, they must be held in line with data protection law.
Whether you display them is probably up to you, though I'd expect you need a policy or make it clear to the assistant that it is part of what you require of an employee. Otherwise, ask for consent and, if they refuse, you have to find a way to introduce a new policy. This might be worth checking with your legal team first. I can't see why anyone would want to object, tbh.
