Is it ok to write in my sick child policy that if a child has diarrhoea then can not attend for 48hrs?

    Absolutely!

I also print off the hpa guidelines for parents to keep at home and recommend that they refer to that before deciding whether or not to attempt bringing an ill child to me, as that is the document I will be referring to should they do so.

Absolutely...not just OK but your right and duty
It is one of the fundamental EYFS 'welfare requirements' (Health)...exclude as per guidance and avoid the spread of infection and keep children .....and yourself...healthy
