How about flapjacks or oat slices?
Vegan cake and cookie recipes would also be suitable.

Another one for vitalite here!
I can't have any dairy myself, and have found vitalite to be the best substitute for baking :-)

Butterfly Cakes | askamum
Chocolate Cup Cakes | askamum
a friend recommended the above recipes, said her mum makes them.
Eggless chocolate cupcakes recipe - All recipes UK looks good.
also, try biscuits that don't use eggs.
these are easy and yummy ( i've made them with vitalite )
Moon biscuits
8oz butter
4oz sugar
12oz SR flour
cream butter & sugar
mix in flour – form dough
roll out, cut out
bake 180C 8-10 mins
( no idea why they are called moon biscuits! ) we sometimes add mixed spice/cinnamon/ginger to the recipe, or roll out with sprinkles on the top before baking!

We have a little boy who cannot have dairy, he too likes baking so we just replace the butter/marg with Pure spread.
Regarding eggs they are not classed as dairy.
Because eggs are an animal by product, just like milk, many people catagorise them as dairy. However, dairy is very specifically designated as the by product of the mammary glands of mammals like cows or goats. Essentially dairy is any milk or milk-made product, such as butter or ice-cream.
