    Default Banana Bread

    Someone wrote in another thread that they hade made banana brea, i've never even heard of it

    would anyone mind sharing a recipe please? I did find this one -

    I fancy making banana bread too, have plenty of ripe bananas at the moment.

    I've got these in the oven. The comments on NMs say they are a bit greasy so I've only used 3oz marg.

    Banana Fairy Cakes




    2 eggs

    100g/4oz self raising flour

    100g/4oz butter/margarine

    100g/4oz soft brown sugar

    1 old banana that has been left in the bowl too long

    Put oven on to 200 C/Gas 6.
    Line a bun tin with cup-cake-cases.
    Put all the ingredients into the food processor or hand whisk (best to start with butter & sugar first, then add the rest gradually) until all ingredients are in and smooth and feel light & airy.
    Put a generous portion of mixture into each cup-cake-cases.
    Pop into oven for between 12-20 mins depending on your oven!

    I usually add a few chocolate drops to each cup-cake before putting in the oven, but you can leave plain, and sprinkle with icing sugar when they come out or just have them straight!
    Delicious with ice-cream too

    Thanks for all the ideas, made this with mindee and dd yesterday and it came out fab! I'm a rubbish cook so they must must be good, lol!

    I make a Mary berry banana and cherry loaf and it is gorgeous really yummy

    We always seem to have overripe bananas so I make alot of banana goodies. My hubby hates bananas but loves this one

    75g butter
    110g caster sugar
    125g self raising flour
    100g wholemeal flour
    2tsp baking powder
    2 eggs
    4 bananas
    handful of dried fruit (or a couple of kiddie sized)
    1tsp cinamon

    You just mash the bananas and chuck everything else in, and stir Gas mark 4 50mins

    I did the ***** recipe earlier. Even with the butter reduced from 4oz to 3oz they felt quite greasy on the bottom. I did add chocolate chips though. I've not tasted them (I hate bananas) but my three children enjoyed them.

    do you only use the 1 banana in this recipe as it says or do you add a little extra?

    i had four over ripe bananas so I doubled the quantity and made 2 so effectively used two bananas to the recipe.

    i love this recipe but i added a pinch of cinnamon and 1/4 of milk to make it moist and i I LOVED IT!!!!
