I googled and then just chose one, there was loads to choose from.
3 or 4 bananas
1/3 cup melted butter
1 cup sugar, can reduce this to 3/4 cup
1 egg beaten
1 teaspoon vanilla
1 teaspoon baking soda
Pinch of salt
1 1/2 cups of all purpose flour
Heat the oven to gas mark 4
In a large bowl mix the butter into the mashed banana using a wooden spoon.
Mix in the sugar, egg and vanilla.
Sprinkle in the baking powder and salt and mix in.
Add the flour and mix.
Pour the mixture into a buttered 4 x 8 inch loaf tin and bake for an hour.
I actually cooked mine for longer as I didn't think it was cooked after the hour.
The children loved it so it's a great way to use up those speckled bananas
If you use the silicone loaf tin you don't need to butter it, the bread comes out easily.

i had four over ripe bananas so I doubled the quantity and made 2 so effectively used two bananas to the recipe.

All purpose flour is the American name for plain flour.

I love Banana bread and made one the other week with one of the children I look after. Now I'm doing my accounts and wondering how much to put down for the ingredients?

i love this recipe but i added a pinch of cinnamon and 1/4 of milk to make it moist and i I LOVED IT!!!!
I make a Mary berry banana and cherry loaf and it is gorgeous really yummy
