Yes its even in the eyfs that your children count in your numbers :-)

Do you mean do your children count in your numbers if they are away from home while you are working?

I was told on my pre-reg training that your children still count even if they are abroad on holiday with grandparents as there may be a emergency and they have to come home suddenly.

Yes my own children. Yes they do always count! There is no escaping them!!
