Carrot and coriander soup

We made some lovely soup today in the slow cooker

1lb carrots diced
2 onions
2 medium potatos
1tsp dried coriander
1&3/4 pints of veg stock
some fresh coriander to serve

bung it all in slow cooker and then whizz with the hand blender and sprinkle chopped coriander and some cheese on top.

Yum!

The mindees all loved it!

we made it first thing - say about 9am and ate at 6pm. It was on my auto setting.

My mother in law has one, it's brilliant! Only wish I could afford one :)
