Hi, The kids have asked to make Gingerbread men next week but what ever recipes I've used previously have either haven't tasted yummy or were to hard. So has anyone got a recipe they would like to share?

this is nice, i roll them very thin, which makes them very hard and crunchy, but if left thick, they are fine!

GINGERBREAD (MEN)

350g pl flour
1 tsp bicarb soda
2 tsp ground ginger
100g butter
175g light soft brown sugar
60ml golden syrup ( i usually use a bit more, say 80ml)
1 beaten egg

greased trays 190/375/gm5

sift flour/bicarb & ginger together
rub in butter
stir in sugar
beat syrup into egg & stir into mixture
mix to form dough
knead till soft
roll out/cut out
bake 12-15 mins ( i find they cook quicker, but that is probably because i roll them very thin! )
cool slighlty on trays then place on wire racks to cool

Made Gingerbread men today.My recipe is :-
100g brown sugar
150g golden syrup
5ml cinnamon
5mls ginger
5ml cloves
150g butter
1 egg
5ml bicarbonate soda
5ml water

450g plain flour

1) put sugar,syrup, spices and butter into a saucepan and stir until butter has melted.
2)Turn off the heat let cool, beat the egg in a small pot.
Dissolve the bicarbonate soda in a small pot.
3)add the egg to the saucepan mixture
4)stir in the bicarbonate.
5)Add the flour to the saucepan mixture as well, little at a time, it will get more difficult to stir but it should come together and form a dough.
6) Turn out on to a lightly floured surface and form into a ball.

You can cool it in the fridge for 20mins but I didnt today, I have put half in the freezer to use towards the end of the week with different children.

Thank you both of you. DS has been asking to do a gingerbread house this year but I just have a feeling it will go sooo wrong.

Give it ago, if it goes wrong you can still eat it!
