I use my normal victoria sponge recipe adding different flavours and bake in loaf tins, easy for slicing/ portioning. I made Coffee Walnut for Hubby and Carolyn yesterday and lemon for Carolyn and me. Next week I have to take cake to Scotland so I think it will be lemon, coffee, chocolate and plain that should cover all the ladies tastes at the hairdressers whilst Im having my hair done . (my sister is a hairdresser and her clients like my cakes  )

Use up over ripe bananas!
Banana Bread
Heat oven to 175 deg
3oz margarine
8oz demerera sugar
3 ripe bananas
1 egg
quarter pint of milk
1lb plain flour
2 tsp bicarb
half tsp mixed spice
Mix margarine and sugar. Add bananas then egg. Add milk. Then flour and bicarb.
When mixed thoroughly pour into greased/lined loaf tin and bake for 1 and half hrs.
Yum yum!
