Rudolph Cookies
Sweet gingerbread dough
175g (6oz) plain flour
½ tsp bicarbonate of soda
1 tsp ground ginger
50g (2oz) butter, unsalted
75g (3oz) soft brown sugar
30ml (2tbsp) golden syrup
beaten egg
Sift the flour, soda and ginger together and rub in the butter. Add the sugar and mix well. Warm the golden syrup slightly and add to the mixture with a little of the beaten egg (will not need it all). Knead to form a soft dough then wrap and chill for 30 minutes.
