do i need food hygiene before i begin childminding as the courses are not till may?x

You don't have to do them at all, they are not compulsory (yet!) but it does show good practice and Ofsted are always happy if you have a Food Hygiene Certificate. Don't worry if you can't do one yet, it can wait. :)
