View Full Version : homemade eggnogg recipe + baileys recipe

Egg nogg

Ingredients:
7 egg yolks
300g sugar
100ml water

500ml cream (single or double)
250ml brown rum 54%
250ml Cognac

put the egg yolks, the sugar and the water into a bowl.
Mix it over steam until thick and creamy (I put it on top of a pot with boiling water on the hob)
it will take a few minutes but it will be ready once thick and creamy

then keep whisking off the heat until it has cooled down a bit...then while whisking pour in the Cream, rum and Cognac

leave it in the bowl until most of the foam has settled then fill into bottles.

Homemade Baileys (the more complicated recipe I talked about yesterday)
still easy to do AND VERY GOOD!
makes 2 liters

Ingredients:
1 liter of cream ( I used a mix of single and double)
350g sugar
12 Lindt chocolate balls (got them in tesco) http://www.lindt.com/uk/swf/eng/products/lindor/lindor-bags/
300ml strong coffee
250ml Korn ( I used Cognac as I had it already from making eggnogg)
100ml Whiskey
150ml rum

Boil the cream with the sugar and if you want a bit of vanilla essence, then once it is boiling add te Lindt chocolate and stir until it is fully dissolved
then add the coffee and let cool
once cool add the alcohol and ready is the most delicious baileys.
enough to give some away as presents and drink some too
some of the chocolate will form a thin layer on top of the baileys so if you want you can filter it through but I didnt bother...if you shake the bottle before you pour some out all is well...

both drinks will last for quite a while and will improve on age. In fact you should leave them for 14 days to mature first..

keep in a cool dark place.

ooo thanks for that will attempt eggnogg tomorrow. How long will it keep in the fridge and what the heck is Zucker ???

haha...I changed it in the recipe

zucker is german for sugar...I was translating the recipes and made a mistake..maybe due to the eggnogg and baileys sipping that was going on at the same time...LOL

it will keep indefinately...the alcohol preserves it...the only thing that might happen is that it thickens a bit more over time. My granny makes eggnogg all the time and it lasts until we drink it all...which can be well over a year at times....
