In a commercial kitchen you do it through the day because the fridge door is constantly being opened and closed...

At home, I have been told once in the morning is enough to show you are monitoring it :D

I just write the date and the fridge temp first thing in the morning and then have a column for any action needed. Don't do freezer as I don't use it for minding.

oh right so if we don't use it then we don't need to record temps?

I'm only going to record my fridge temp but my ofsted preinspection lady wasnt convinced it needed doing at all and was going to ask at a meeting the next day, she said it was more to do with the local councils health team rather than ofsted.

You are a food business if you cook OR serve any food including snacks to children.

By law - the eyfs - you must be registered with your local authority environmental health dept.

You must comply with their regulations.

You will find out more in the publication 'safer food better business' which you can order from here -

5 hours! Crikey!!

Temperature records are not for Ofsted don't forget! they are for Food Hygiene...

The Eyfs says we have to be registered with Environmental Health as a food business.

One of the requirements of Environmental Health is that you can show food has been stored and cooked properly.

Hth :D

Hiya,

Where did yu all get your thermometers from then? I have just looked on ebay and there are so many to choose from too. Do you go with a digital one or a normal glass looking one with the line down the middle (iykwim) :panic:

hi. I've got fridge and freezer thermometers from eBay from a company who were very helpful as Id ordered the wrong type for freezer. They are woad thermometers and instruments. They record minimum and maximum temp and have an alarm if temp not right x

I record both fridge and freezer in my daily diary, along with the reheat temp/original temp of any food I serve the mindees.

I used to keep a sheet on the freezer and fill that in but got fed up with so many different sheets of paper for everything so now do it all on one page...

Am hoping that's acceptable to EH but as they didn't even have the good grace to drop me a line/call and let me know I was registered (or not) I have no way of knowing...
