75g/3 oz Raisins
75g/3 oz Sultanas (OR REPLACE WITH 3 OZ CHOC CHIPS)
12 slices white bread crusts removed
100g/4 oz unsalted butter softened
4 eggs beaten
100g/4 oz caster sugar
2 tsp vanilla essence
550 ml/1 pt milk
275 ml/10 fl oz double cream
1 teaspoon powdered cinnamon
2 tbsp brown sugar
Preheat Oven to 180C/350F/Gas mark 4
Scatter half of the raisins and sultanas over the bottom of the ovenproof dish. Then butter the slices of bread on one side and cut them in half.
Combine the beaten eggs with sugar, milk, cream and vanilla and beat well.
Next arrange the bread slices over the bottom of the ovenproof dish, so they overlap. Scatter the rest of the fruit all over them and pour the creamy mixture all over the bread.
Sprinkle with cinnamon and brown sugar. Put in the oven for 30/40 mins or until the top is golden brown.
It is yummy but sugary if you replace it with choc chips. :thumbsup:
