I've not been minding for long so Harvest Festival will be my first thing to celebrate/do things with my mindee. The problem is he's only 2yrs old and what would I do with him. He's not going to understand anything and he can barley talk yet?

I wouldn't start doing things like festivals or celebrations with a 2 year old... wait until he's pushing 3.
What he might enjoy, however, is using seed heads to make a collage or putting them in playdough to feel the texture or adding them to sand to find...
He might like making some bread buns with you or playing games with pretend bread, putting it into and out of bags and boxes when 'shopping' with the dollies or teddies'.
Get a few nice photos of him using natural food resources such as challenging the senses with oranges and lemons...
All excellent activities for a 2 year old and great for thinking about Harvest with older children, so inclusive for all :D
