View Full Version : Fruity tea loaf...

Have made this today...mmmm
very easy to make and the cake is nice and moist :)

Ingredients

1 cup cold black tea
8 oz mixed dried fruit
8 oz self-raising flour
4 oz superfine sugar
1 large beaten egg
2 tablespoons orange marmalade

Method

Grease a 1.5lb (675g) loaf tin Preheat oven to 180 or gas 4
Place the fruit in a small bowl, pour the cold tea over the top...soak overnight if possible, or until the fruit swells.
In a bowl combine the flour, sugar, egg and marmalade
Then, pour in the fruit and any tea left in the bowl.
Stir thoroughly
Put into loaf tin and bake in the oven for 1 hour
Allow to cool slightly before removing from the tin

Yummy thanks for that! Was thinking this week should make some of this my aunt makes a lovely one! Would it be ok without the marmalade do you think?

I don't always use marmalade, but my dad loves it so I always make it with just for him!!

I've just weighed everything out and put the fruit to soak, my 9 year old lo can mix & bake in the morning, she loves baking but only comes 7-9 a.m. & this is nice and easy - thank you! :thumbsup:

Was having a bit of a sweet tooth craving - but not sure what I wanted, so have just made the tea loaf - 10 more mins till I can have some thank you :clapping:

I made this one (and many many others) for Macmillan week (should of been coffee morning but mine lasted a week), it went down really well even my son-in-law that 'doesn't like cake' loved this one..... I did glaze the top while it was still warm to make it nice and shiney and sticky :thumbsup:

Definately doing this again - a lovely smell of cooking this morning!

My assistant and I have just had some after lunch with a cuppa - don't think there'll be much left for snack time later.... :D
