Are you a baker? You could do a castle cake with ice cream cones as turrets.

A Google image search (http://images.google.co.uk/images?sourceid=navclient&ie=UTF-8&rls=GGLJ,GGLJ:2006-41,GGLJ:en&q=castle%20%20cake&um=1&sa=N&tab=wi) brings up loads of pics, some very complex but you could simplify it and get the children to stick on sweets, etc to decorate it.

We are very lucky where we live, we have the real thing, albeit a bit broken down, just a few minutes walk away, and we can see it from my bedroom.
