I am making these jubilee / olympic's Cake-pops with my Mindee's, so thought I would share, as they are very easy.
Jubilee/Olympic’s Cake-pop recipe
Ingredients
1 x box of cake mix
1 x tub of cake frosting
Red, white and blue sprinkles
1 x large bar of chocolate to melt
lolly sticks
Method
• Mix and bake your cake mix (in a single tin)
• When cool crumble the cake mix into a bowl
• Stir in ½ the tub of cake frosting until it is the consistency of soft play dough.
• Roll mixture into balls (walnut size) and place on a flat tray covered in grease proof paper.
• Melt a little of your chocolate, dip the ends of your lolly sticks into the chocolate and push one into each cake ball.
• Place the tray in the freezer to harden for approx. 45mins
• When cake-pops are firm, melt the rest of your chocolate and dip each cake-pop into the chocolate. Make sure the whole ball is covered. Then sprinkle the red, white and blue sprinkles over to decorate.
• Stand them to set (I covered a block of florist foam in tinfoil, you can also use a cardboard box with holes punched in it).
• Store in the fridge.
• You can also buy little plastic sleeves from craft/cake shops to pop over the cake-pops and seal with a tie-twist/ribbon if you want Mindee’s to be able to take them home.
