    Default Pumpkin Soup

    To go with the most excellent books Winnie the Witch
    This is Winnie's Pumpkin Soup (books can be found in Morrisons)

    1 medium pumpkin
    500g potatoes
    1 medium large onion
    1 stock cube
    knob of butter
    30ml olive oil
    salt and pepper (to taste)
    double cream to garnish
    handful of fresh corinader leaves - chopped

    peel the pumpkin with a potatoe peeler
    chop in half and scoop out the seeds with a spoon
    chop into 2cm cubes
    melt butter with the oil in a large pan
    peel and chop the onion - fry gently to soften with the lid on
    check and stir to make sure it doesn't brown
    peel potatoes and chop in 2cm cubes
    add to the onions in the pan and stir to coat well with teh oil
    add pumpkin cubes and stir well

    cover and cook for 10 minutes - stirring occasionally

    when potato has started to soften, crumble the stock cube into 1lire of water add to pan
    simmer for 15 mins until veggies are soft - add more water to keep veggies covered
    mash the soup with a masher or blend
    season to taste

    ladle into bowls, add a swirl of cream and come coriander

    serve with warm crusty bread

    not sure about the soup but we love winnie the witch in my house
