Pate with sauteed onions
Maybe silly to share but I made this as our Chrsitmas starter and it was luvverly. I bought some more pate today to have for dinner and it just reminded me.
Any sort of pate, choose your favourite. We had duck and champagne on Christmas, tonight it's duck and orange.
Onions, probably at least 1 per person cos they shrink big time.
Bit of oil
Bit of sugar (I used brown sugar but caster will work)
Crusty bread (you could have it with crackers but the bread is so lovely with the onions)
Just cut onions into strips and begin gently frying in oil for about 1/2 an hour on a low/medium flame. You do need to stir regulary as you don't want them to burn but to brown nicely all over. After about 1/2 hour, sprinkle just a dab of sugar over the onions and stir again. They're finished when they are all reduced and a lovely brown colour.
I served in a very rustic manner with cut bread in a basket and the onions and pate as a sort of serve yourself but you could easily pretty it up and serve it on individual plates. Really delicious stuff.
