    Default Cupcakes / fairy cakes

    Hi, does anyone have a nice cupcake recipe. I'm baking tomorrow with the kiddies , did a practice run on an Annabel karmel recipe but it didn't turn out that great.

    I weigh the eggs and then do the same quantities

    ...
    So say 3 eggs weigh 140g ... That's 140g of butter/flora/baking marge creamed with 140g caster sugar. Mix in eggs. Add a dash of vanilla essence. Add 140g self raising flour with a tsp of baking powder. Stir well.

    Put in bun cases. I usually fill 2/3rds full and bake for 10 / 15 mins. Not sure what temp as I cook in an aga!

    Thank you for that, the Annabel Karmel said 2 tsp of baking soda think that's why it wasn't nice .

    I use 6oz of self raising flour, caster sugar and stork. 3 eggs 1 tap o vanilla extract and 1 tap of baking powder. 1 tbsp of water. Make in a preheated oven 170 for about 20 minutes.

    For chocolate I swap 1oz of the floor for cocca powder.

    Similar to loocyloo except I don't weigh the eggs :-)

    I do the same as loocyloo with the exception that I don't add baking powder. They always turn out light n fluffy. It's how my granny taught me

    I do 4oz of everything. Butter and sugar, cream together. Add 2 eggs. Add SR Flour and maybe about half teaspoon baking powder if I have some. Add a few drops of vanilla extract (not essence). That's it. They are always light and fluffy.

    No it was defo baking powder sorry typo error! The recipe had said 2tsp but it wasn't nice. Did it the day after and it was tons better xx
