You can get pumpkin spice oils for burners and things, and I'm sure you can get pumpkin spice as a cooking ingredient. No idea where from ... Amazon probably!

What a lovely idea, pumpkin colour play dough and autumn/ Halloween cutters.
Typical spices for pumpkin dishes are cinnamon and nutmeg. Any combo of those will smell suitable! Pumpkin itself is pretty bland and tasteless.

You can also use pumpkin emulsion or pumpkin pie spice
