    Default Coconut Rock Cakes

    I made these today, they were so easy and really nice. I made them a little too big though, I didn't expect them to rise as much as they did. It made 17 cakes but it would have been better to make them smaller for the children.

    I was thinking of adding some chopped cherries next time, coconut and cherry is nice together. If I was doing them for a school sale or something then I would decorate them with a cherry.

    I amde them today. Seriously yummy, easy to do but I made a classic mistake

    Didn't divide the mixture up small enough

    Yum yum yummy

    Will do these again on monday afternoon with new mindee

    I had to search the forum for this recipe so thought I might as well bump it for others. They'd be ideal for red nose day with a cherry nose on top.
