    Default Beetroot and chocolate muffins

    The children loved making these and enjoyed eating them ........

    •120g self-raising flour (wholemeal is best)
    •1 1/2 teaspoons cocoa powder
    •1/2 teaspoon baking powder
    •1 small egg
    •60g light muscovado sugar
    •90ml semi-skimmed milk
    •2 tablespoons sunflower oil
    •75g finely grated, peeled cooked beetroot
    •25g chocolate chips

    Pre - heat oven gas mark 6 - 200c - 400f

    Mix together the flour, sugar, cocoa , baking powder and choc chips

    Wisk the milk and beetroot together in a different bowl - show the kids how it changes colour !

    Add the egg and oil to the flour mix , along with the beetroot mix
    Stir it up up
    Should be runny

    Spoon the mix into 10 muffin cases

    Leave to cook for 25 min

    Enjoy

    Thanks for that Angel although I must say it sounds disgusting!

    Have put the ingredients on my shopping list.

    Hmm, might try that.

    We grow beetroot. Last year I made a beetroot cake, without the chocolate and it went down really well.

    They are supposed to taste really nice with home grown beetroot

    The kids loved them are you going to have a go ?

    I thought the same but its different and the kids did not care to be honest

    They did not turn their noses up like we do

    I tried one and they were ok and not like you expect

    Sounds great fun. I think my 6yr old boy after schoolie will enjoy this, he loves cooking.

    Hope you warned the parents that their childrens pee may be purple
