Rock Buns

Me and the mindees just made rock buns but they look more like pancakes what have I done wrong?

They should have had a dough consistency, a bit former than cake mix. What was yours like?

I've got a fantastic recipe for rock cakes - I can't cook but every time I've done them they've been brilliant!

8oz SR
1 teaspoon mixed spice
1/2 teaspoon nutmeg
5oz marg
3oz demerara sugar
5oz currants
1 egg, beaten
2 tablespoons milk

Sift flour and spices in a bowl. Rub in the marg until breadcrumbs.

Stir in the sugar and fruit, mix in egg and milk to make fairly stiff mixture.

Plonk spoonfuls on baking tray slightly apart (I then sprinkle a little more demerara sugar on them) and cook for 20 mins on 190degsC.

Cool on wire rack.

Honestly, these are beautiful and can't go wrong!

I am like you and cannot bake - When I open the oven door everyone sighs, I should be able to get a simple recipe correct especially as I often bake.
I shall try this recipe and let you all know how I get on.
