    Default Coconut and Carrot cake

    http://www.bbcgoodfood.com/recipes/1...-carrot-slices

I've made this, not tasted it though as it is for tomorrow. The reviews said it can be a bit dry with the topping suggested. I didn't bother with the topping suggested, I used mascarpone (sp?) with icing & coconut.
