    Easy Peasy Lemon Cheesecake.

    1 tin condensed milk
    10ml double cream
    digestive biscuits
    Butter
    4 lemons

    Bash biscuits to crumbs
Melt butter in pan then mix in biscuit crumbs. Put into a dish pressed down and into the fridge to harden.
Mix the milk and cream together then squeeze in the juice of the lemons until stiff. Pour onto the biscuits.
I usually add grated choc or crumbled flake or choc buttons to decorate.

Very fattening, very filling but YUMMY!!!!

    1/2lb of Digestive biscuits
    3-4oz Butter
3 x large tubs of Philledelphia cheese
    6oz Caster sugar
    2 x eggs
    5 drops of vanilla essence

Melt butter in a pan and add the biscuits which have been crushed, stir them into the butter and tip out into a round cake tin. Flatten biscuit base down.

Mix together the cheese, eggs & vanilla essence with the sugar.

    Pour onto the base.
Bake on a low heat for 30-45mins. (Gas 2)

This dessert is then best cooled and placed in the fridge for a few hours before serving.
