    Default sweetcorn fritters...

    very easy and yummy!!

    older kids can do a lot of it themselves..

    Ingredients:
    60g self-raising flour (or use plain and a pinch of baking powder)
    2 eggs
    2 tbsp grated cheese
    300g sweetcorn (from the tin drained)

    mix flour, cheese and sweetcorn.
    whisk eggs and add and mix well

    heat some oil in a frying pan and add spoonfulls of the mixture.
    fry on both sides until golden brown,

    we had them today with a joghurt dip and salad! It was very good and the kids loved it!

    Good recipe idea thank you. I will try this over Easter when I have the older children too.

    The flour measurement is very specific isnt it? - 69g!!!!
