    Default Really easy and HEALTHY bananna muffins

    My son cant get enough of these, which is great because he thinks its a real treat, but you can see by the recipie that they are actually rather healthy - especially if you use flora instead of butter as I do _sure butter would be a bit more tasty but I would then have to polish the remaining packet off on toast, so steer clear of buying it!


    25 g Butter
    2 tablespoons honey
    2 tablespoons milk
    2 large ripe bannanas (I will be adding 3 next time)
    150g self raising flour
    1/2teaspoon bi carb


    Heat butter honey and milk together.

    Mash the bannanas into big lumps

    Sift flour and bi carb together

    Mix butter mix and banannas together then mix with the flour (dont over mix or they go hard)

    Spoon into about 6 muffin cases.

    bake for 20-25 mins on 180 (Ibake for 20mins at the most, so the top doesn't go too crunchy for the little ones)

    Cool on the tray for 5 mins, then onto a cooling rack

    You can then add icing but I kept them healthy without it! If adding icing, it sugguests adding a teaspoon of caramel sauce to taste.

    Mmmmm I would love to try these, sadly unless I hide them bananas in my house don't stay around long enough to become ripe, the rotten lot eat them when they're still green ( yuck !)

    I have made something simmilar in the past and it was yummy. I dont think it was even allowed to go cool in this house!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!

    I go to tesco when I know I am going to bake them and buy the really ripe ones that are going brown that noone wants!
    It's true, they are all eaten that very same day! so I find it best to bake in the morning and have them as an afternoon snack.

    needed somthing for after school snack tonight so we have just made them and they are now in the oven, we didnt have big muffin cases so put them in normal bun cases , although i may have over filled cause they are rising rather well!!!
    lots of yummy smells though

    they were yummy, gonna try adding some cinnamon next time aswell.
    kids gobbled em up so quick there wern't any left for my other half!!

    We love banana muffins in this house .

    A tip for those of you who occassionally have an over ripe banana left over. They freeze perfectly (in their skins), and when it come to using then, just microwave for about 30 seconds, and then the banana literally slips out of the skin, when you cut the end off. I have about 10 banana's in my freezer at the mo, so really should get a few batches on soon.

    they went down a treat! we also made some with some chocolate melted into the honey/butter and milk mix (left over from easter birds nests lol) which went really fluffy and looked lovely and light, needless to say these went down well too

    Shame I am on a diet haha
