View Full Version : Lettuce Wraps

1 head iceberg lettuce

1 package firm tofu cut into 1/2 inch cubes

1 can (8 oz) drained chopped water chestnuts

2 tbsp. canola oil

2 scallions, sliced

1 garlic clove, minced

1 bag (16 oz) assorted broccoli, carrot and red cabbage, shredded

1 tsp. freshly grated ginger

Sauce of your choice


Step 1
Heat frying pan with oil and saute garlic, scallions, tofu, and ginger for 1-2 minutes.

Step 2
Add water chestnuts and half of the assorted veggies and toss with Cooking Sauce.

Step 3
Cook for 1-2 minutes while tossing.

Step 4
Remove pan from heat and as it cools, prep lettuce leaves.

Step 5
Cut 1/3 of head off from stem side of lettuce and carefully peel away whole leaves. Submerge and rinse in cold water. Drain in colander.

Step 6
Place lettuce leaves on a plate and serve with veggie mix from a bowl with a large tablespoon. Lay the lettuce leaves on individual plates and place one heaping spoonful in center. Fold long sides into center and then fold short sides in. Serve with store bought dipping sauces.

At the risk of sounding stupid, what is a scallion?

it is like a green onion they look a bit like a spring onion and have a strong taste

But you can use chives instead which have the same sort of taste

You really can use anything you like for these wraps anyway
