View Full Version : Coconut Flapjack Cookies

Just made these and they are gorgeous and so easy to make with the kids. Its a recipe from and old copy of Child Care mag

Ingredients

120g butter
1tbsp golden syrup
100g demerara sugar (Id run out so used soft brown instead)
100g jumbo oats
100g self raising flour
50g dessicated coconut
1 tsb bicarbonate of soda

Preheat oven to 180/ Gas 4

Melt butter, sugar and syrup and stir into remaining ingredients. Form into walnut size balls and put on greaseproof tray, allowing room for spreading. Check mix not too for kids hot once melted stuff added.Press down lightly using back of fork.

Bake for 10-15mins til golden and firm. Allow to cool a few mins on tray before putting on cooling rack

They are delicious as they are but I reckon they would be even nicer if you added chopped cherries or apricots :thumbsup:
