Ingredients
Tomato Sauce -
1 tin plum tomato
1 tin of water
1 onion - peeled and chopped
1 stick celery - chopped
2 cloves garlic - sliced
2 carrots - peeled and chopped
1 red pepper - chopped
ΒΌ tub tomato puree (3 tablespoons)
salt and pepper
1 tablespoon fresh herbs - chopped
Pasta -
12 oz / 300g penne pasta
2 teaspoons olive oil
touch salt
Grated cheese to serve (optional)
Method
Make the tomato Sauce -
Put all ingredients a large pot except the puree and simmer for 30 minutes until all soft
Blend or liquidize
Add the puree, this will add colour, thickness and shine
Taste and season
Meanwhile bring a big pan of cold water to the boil with the oil and salt
When rapidly boiling add the pasta, stir a couple of times and cook as per instructions (minus a minute) on the back approx. 8 - 10 minutes
Drain stir in to the tomato sauce
Serve with a sprinkle of grated cheese (op)
