I thought it might be a good idea if we had a thread where people put their favourite, simple, tea time recipes so we could all try something new every now and again?

What do you think?

I will start off with my Brocolli Quiche - we think this is yummy and it's really, really easy to do!


Ingredients

Ready made quiche crust
30g butter
1 x onion - chopped smally
1 x garlic clove
175g chopped fresh brocolli
a few button mushrooms
cheese
4 eggs - well beaten
355ml milk
salt and pepper
15g butter - melted

Directions

Oven to 360 F / 175 C

Melt 30g butter in small saucepan, add onions, garlic, brocolli and mushrooms - cook slowly until soft.

Line the crust with thin slices of cheese and spoon vegetable mixture over the top.

Combine the eggs and the milk, season with salt and pepper, stir in the 15g melted butter. Pour over the vegetables and sprinkle grated cheese on the top. (This egg/milk mixture makes loads so I tend to halve the above amounts for mine.)

Bake in oven for 30 minutes or until the centre is set.

ok - here is a really quick one!

Tomato, cheese and pancetta pasta.

Boil your pasta (enough for however many you are cooking for)

The sauce takes 5 minutes.

1 Tin chopped tomatoes
1 Garlic clove
1/2 teaspoon tomato puree
150g cheese (mature cheddar)
1 small pack diced pancetta
Sprinkle of black pepper
1/4 finely chopped onion

Fry off the pancetta for a couple of minutes to lightly brown. Add the onions, fry for a minute then add the tomatoes, garlic and tomato puree. Once its all bubbling (a couple of minutes) turn off the heat and add the cheese into the sauce stirring continuously until its all melted in. Add black pepper to taste.

Tip over the pasta and serve. Add a little extra grated cheese on top!

The trick is not to let the sauce get cold in the pan otherwise the cheese sticks everywhere so dont start the sauce until the pasta is almost ready!

The kids love this and so do I!

The quiche sounds lovely. Can't eat the pasta because it's not veggie.

Can we have lots of easy veggie recipes please because I'm always looking for them. :D

Baked peppers...

Cook a handful of rice

Boil some onion in a little water until soft

Mix rice, onion, frozen peas, sweetcorn, cubes of ham if you are not a veggie, pieces of string beans, pulses, sunflower seeds, mixed herbs, tomato pieces, pine nuts, chopped mushrooms... whatever veg is in the cupboard really

Hollow out a pepper (any colour) and put the mixture inside

Sprinkle cheese over the top if you like or replace the lid

Cook in a preheated oven at 180c for 20-25 mins

Children like making these - and if you use a red, yellow and green pepper, you can include a traffic light theme! :D
