I have prepped a roast dinner, cooked the joint and prepared the veggies - made a pork & apple casserole and a huge fresh fruit salad.
I have 10 mindees tonight. They love their roasts and there will be clean plates and lots of smiles.....
so why do I feel irrationally annoyed at the fact that dinner will be served at 5 and by 5:10 it will all be over

Diced pork fried lightly with garlic, ginger and sliced red onion
Add a tin of tomatoes and some chicken stock and cook in the oven for 2 hours on a low heat.
Half an hour before serving add fresh chopped herbs (today I added sage) and quartered dessert apples.
Serve with Rice
Delish!
