I bought some cute little eater biscuit cutters from poundland the only thing is I cant make them to save my life! I can make perfect cakes I do them for all the kids parties! But when it comes to biscuits , well just a big no no, they go hard , or out of shape!

Does anyone have a really simple recipe????

Easter biscuits

What you need:
• 3 oz/75g butter/margarine
• 3 oz/75g caster sugar, plus a little extra for dredging
• finely grated rind of 1 lemon
• 6 oz/150g plain flour
• 1/2 tsp mixed spice
• 2 oz/50g currants
• 1 egg, beaten
What to do:
Preheat oven to 190C,375F,Gas Mark 5.
Cream butter/margarine and sugar until pale. Add lemon rind, then fold in flour, mixed spice, currants and enough egg to bind mixture to a stiff dough.
Roll out biscuit dough to approx 1cm thick and cut out shapes with biscuit cutters. Put on greased baking trays. Re-roll any leftover dough to make more biscuits.
Bake biscuits in for 8 to 10 minutes until golden brown. Sprinkle with extra caster sugar when still hot, then transfer to a wire tray to cool.

not tried these yet but look easy enough!

Asda had really cheap shortbread mixes yesterday, they were something like 37p and you add butter.

I tend to make gingerbread (recipe will be on here if you search).as I find the dough is easily rolled again and again without breaking.
