Macaroni cheese frittata:

prep time 35-40 min
cooking time 15 minutes

ingredients:

250gr macaroni
150gr mature chedder, grated
200ml milk
fresh chives, chopped
black pepper.

method:

1. preheat oven gas mark 6
2.cook pasta as per intructions and drain.
3.whisk eggs and milk together. add the cheese chives and season. stir in the cooked pasta. pour in to ovenproof dish and cook for 35-40 mins until frittata set. can be served hot or cold.

i made this last week and it was very tasty, you could add some chopped cooked bacon or ham. ideal for picnics and for the children to just pick up and eat with there fingers.

I made this for lunch today. The kids turned their noses up at it (but they are fussy eaters) but I thought it was yummy. My 19 year old dd loved it too, so thanks for that Hazel. :D
