View Full Version : Bailey's cheesecake brownies - with Photo!

DP went to corner shop and got me Bailey's!!!!!! :clapping: :clapping:

here is the receipe for the brownies....

Brownie mixture
110 g dark chocolate (min 70% cocoa)
110 g butter
120 g vanilla sugar (or caster sugar)
60 g plain flour
2 eggs
glug of Baileys

Cheesecake mixture
225 g cream cheese
40 g caster sugar
1 egg
another generous glug of Baileys

Preheat the oven to 150C then Line a 23 cm/8 inch square cake tin with baking parchment. Gently Melt the chocolate with the butter. Remove from the heat, add the sugar and stir then leave to cool slightly (if you don't do this you may end up with scrambled egg brownies).

Beat the eggs one at a time into the brownie mixture, beating until it is glossy. Stir in the Baileys until well combined then gradually fold in the flour then pour into the cake tin .

For the cheesecake mixture beat the cream cheese and sugar together. Add the egg and mix then stir in the Baileys until all is well combined. Top the levelled brownie mixture with the cheesecake mixture and using a knife, gently swirl it into the chocolate mixture.

Bake for 25-35 minutes, or until just set in the middle. Leave to cool in the tin for 15-20 minutes before cutting into squares and serving.

yeah....I used mascarpone as cream cheese for a change from philly..
oh and I used milk chocolate as I prefer it to the dark one...:blush:

sounds lovely, going to give it a try. when you say a glug of baileys do mean about a shot glass full?

I dont like cheese cake, and i hate Baileys so not for me :panic:

But Mrs would love it, so may do this as a treat for her sometime.

yeah I guess...I mean as long as you dont make the batter to thin you can use as much as you like...I probably used a but more than a shot glass full..maybe 2...will see how it turns out...
(I didnt measure it...just poured it out of the bottle...:D )
