the sun is hear hurrah!!

well I don't know how long for, but I feel like a change, so its time to post your tea time meal ideas...

bacon omlette with new potatoes and salad (veggies from the garden if they ever grow!)
chicken kebab (chicken breast marinaded, cooked, sliced in a pitta with some salad) with backed potato
lemon chicken (chicken marinaded in lemon juice and a squeeze (not for under 1's) of honey) on skewers with cous cous
warm chicken and bacon salad with new potatoes and warm baguette


(I know so far, thats a lot of chicken, but chicken is a summery food imho and im trying to make food a bit more healthier and we all eat what I cook)

tuna pasta bake with salad

any more suggestions ladies?

Tuna potato salad mmmmmmmmmmmmmm

Cut new potatoes into quarters and cook, mix with cooked sweetcorn, spring onions, tinned tuna, and approx 2 tbsp of mayo - serve warm or cold - yummy!

mine like cold platters that they can help themselves from.

I do a platter of meats, satay sticks and cheese

then I do another of vegetables arranged in a colour wheel and a bowl of salad with some garlic bread.

we finish with a platter of fruits with a chocolate dipping sauce.

or, if I have enough time in the day to do it, I do layered coloured Jellies

quiches? plain cheese/bacon/broccoli/salmon ... anything really?!

mine love pasta salad

cold salmon and couscous

greek salad with feta cheese

another favourite is bean salad - cooked and cooled thin green beans, a tin of (drained!) 3 bean mix, sweetcorn, sometimes peas, sometimes chopped pepper/tomato, sometimes a bit of pasta! and a tin of flaked tuna. yummy as is, or really nice for older ones and adults with a french dressing!

i still do pasta bol/chilli etc as mine request it ! LOL!!!

Thanx for the meal ideas. All my mindees used to bring
their own lunch but have now asked for me to provide.
Some good ideas now of what to give them.

Made me think about my own lunch now.I've only got before
and after school today and i'm feeling a bit peckish now:)

I do some homemade bread with a spring/ summer spread

I use some greek yogurt, loads of chopped up chives from my garden (you could also use radishes), a squeeze of lemon juice, some sweet paprika powder..a bit of salt and pepper and a bit of butter

all mashed together makes a lovely spread for bread

My own two boys like what we call a 'combo'
basically consists of either a roll, pitta,cheese on taost, sandwich,
with salad veg, raw veg, fruit, meat slices, mini sausages, cheese sticks or whatever Ive got in the fridge that day.
