Sorry, posting this again as I think I put it in the wrong place.
My mindees actually prefer this recipe to the traditional one.
2 cups plain flour
4 tsp baking powder
1/2 tsp salt
2 tbsp sugar
1/2 tsp vanilla extract
3 tbsp oil
1 1/2 cups water (can use milk if you wish)
Mix dry ingredients with a fork.
Add vanilla, oil and water (or milk).
You can add more water if you wish - batter should not be too runny or too thick.
Cook in hot oil or lard in a frying pan. - I usually make small ones which come out like Scotch pancakes.
Serve with sugar and lemon, jam, honey, syrup or just as they are.
