My husband and I were talking about this the other day when I was renewing house/car insurances. Is there such a thing as a childminders insurance for if we can't work due to ill health or anything similar?

I'm sure there must be, other self employed people can get sickness insurance.

You can get cover but it is very very expensive. Try a brokers.
