Well done Ruby!

I started being serious again last week, did wonderfully until the weekend then fell off the wagon. BUT, all the sweets are finished now so first thing this morning I got out all my old food diaries and I'm starting again as if this is week one (my weigh in is a Monday evening)

Soooooo... I'll be joining you in a glass of water Debbie

Going strong so far. Two days in and feeling motivated. I do need a snack at the moment, though. Feeling peckish but nothing easy and healthy to snack on. This is where I normally fall down so must go make an effort to create a healthy snack.

1/2 cup of oats, 1/2 chopped apple, 1/2 cup of semi skimmed or skimmed milk (or milk & water), a little cinnamon or nutmeg... in the oven for 20 mins (or microwave for a lot less)...

Filling and yummy - I just fed it to 7 children pretending it was apple crumble :D

I've never baked it before, Sarah but I use nearly that exact recipe in my slowcooker overnight. I might try popping it in the oven to see about the texture. I don't like oats microwaved, though. What gas mark do you use?

Electric 160c... which I think is about gas 5.

I was having a nosey round this site and found some nice stuff including that recipe :D

So far so good for me too :)

Fat Free Tortilla Chips

sheets of lasagna
spray cooking oil (I use fry light but there are loads of different ones)
seasoning

Boil the lasagna for 4-5 minutes until it drapes over the spoon.
Remove from water.
Cut sheet in half then cut each half into a rough triangle.
Place on baking sheet sprayed with oil.
Bake in pre heated oven 200 for aprox 12 minutes until golden and bubbly.
Leave to cool.
Pop into a plastic box, add seasoning and shake (I uses ASDA tex mex or BBQ seasoning)

Dip (optional)

Small tub of quark cheese or fat free natural yogurt
Crushed garlic
Finely chopped chives
Ground black pepper

Add the garlic, chives and pepper to the tub of quark or yogurt and mix together.

Yummy.

6 sheets fit on my baking sheet which is a lot of tortillas :)

Not me I am on day 5 and going well. I started in July and was gobsmacked when I got weighed on Wednesday. Lost 2lbs and made my grand total of 50lb loss - now 11 to go.

Keep going ladies - it will be worth it when you are skinny minnies - well not literally!
